Many moons
ago while we were residing
down in Florida
I had received a catolog in the mail
about chickens
. . . all kinds/styles of chickens . . . it blew me
away that there were sooooo many kinds! I never knew!! Then I saw it
. . . a chicken that laid "rainbow eggs"
. . . what??? no way?? way!
. . . if I recall correctly they could & would lay the "normal" shade of white, brown, a light brown that leaned toward a pinkish color, a light blue & green . . . yesssss, green!!!! I just thought that was indeed the hot snot
!!! So I started talking about raising chickens . . . well, back then it wasn't a "cool" thing to do
& I really did not get any support on my desire . . . plus that I know absolutely positively nothing about chickens
. . . well, I fig'd it was best to just . . . ya' know . . .
Flash Forward To Present:
My Boss Lady at Liberty Tax was telling me how she was a city girl, born & bred . . . DC style . . . but her husband was country
through & through . . she had me laughing
of visions of their dates when he would bend down, pick something off the ground & eat it ( talking grass, dandelions, sorrel ) . . . now they have chickens
. . . and guess what one kind of eggs a few lay? hhmmm
? Rainbow eggs you say eh? CORRECT!!!! Imagine that?!! So the other day she brought me in a dozen varitey & I love love LOVIN' it
!!!! They are sooooo gorgeous!! My youngest
was tickled when I brought them home, especially when she eyeballed the green one . . . she is a majorly huge fan of Dr. Suess . . . sadly she was a bit disappointed
to discover the inside was not green as well . . . but we had fun comparing these eggs to our store
bought . . . the yolks on the rainbow eggs were bigger, firmer & brighter 
. . . the goo ( stuff not yolk ) was clear 
. . . she & Hub agreed they came out really good too
. . . sadly I can not eat eggs
. . . I like them, but they don't like me so much
. . . so out of habit I doctored these like I do the store bought ( salt, milk, cheese ). . . but Hub is thinking I probably won't have to with these ones, he thinks that maybe due to the raising & processing being different from the store ones - I might be able to eat these & not have the problems I do with the others . . mmm, maybe . . . maybe . . 
We do have Farmer's Markets
round this way but we rarely get a chance to go to there . . . plus I don't think I have ever seen anyone selling eggs
. . . so for her to give us these eggs
. . . for us to have the chance to experience them
. . . awesome
! To me it is a special Blessing & I am grateful for God
for not only making these things but showing them to us! Glory Be To God & Praise Sweet Jesus!
